Falafel Burger

My mom used to call these Amy Burgers when she was growing up in New York City.

– 2 tablespoons olive oil

– 1 cup minced onions

– 3 cloves garlic, minced

– 1 cup finely chopped carrot

– 1‐15oz can drained cooked garbanzo beans

– 1 1/2 tablespoons tahini (sesame paste)

– 1/4 cup minced fresh parsley

– 1/3 cup plus 1 tablespoon chick pea flour (you can usually find this in bulk at Whole Foods)

– 1 teaspoon each sea salt & freshly ground black pepper

– Juice of 1/2 medium lemon

1. Saute onions in olive oil in a skillet until soft, add garlic

and carrots and saute for another couple of minutes.

2. In a food processor, mash drained garbanzo beans and

tahini. Mix in parsley.

3. Combine flour, baking soda, salt and pepper then

blend with chickpea mixture

4. Form 4 patties with floured hands

5. Heat with olive oil in skillet, turn when browned,

flipping every couple minutes until golden brown

6. Squeeze fresh lemon juice and eat

Can be made for dinner and left‐over’s for lunch.
