So Many Zucchinis So Little Time

One of things that I love most about summer is the abundant vegetable garden we are growing this year, I feel so blessed to be able to eat straight from our own garden.

One of the first veggies that appeared first in our little garden is the zucchini. It’s actually quite the show off. We picked our first one and grilled it for dinner, we were quite pleased with ourselves, and then… they started coming fast and furiously! “Help, what are we going to do with all these zucchinis?”

Fortunately, we had a few ideas up our sleeve. The first recipe we had for our multiplying zucchinis was, Pickled Zucchini! Yup, that’s right, we pickled our zucchini, similar to pickled cucumbers… aka pickles.

So I thought I would share the recipe with you here, as they have been getting rave reviews. They are great little gift to bring to friends who invite you over for summer barbecues, or you can bring them on picnics, put them on burgers, or simply eat them straight out of the jar.

This recipe was inspired from a local restaurant here in Portland called Castagna.

Step 1: soaking sliced zucchini & onion in salted water

Ingredients:

2 lbs. zucchini
1 small onion
1/4 cup salt (we used kosher salt)

Slice the zucchini thinly (we used a mandolin for this) and cover with cold water and salt. Stir, and let stand for 2 hours.

Boil:

disperse zucchini & onion mixture into jars & pour hot liquid over equally. let cool (Don't forget to remove the cinnamon stick)

3 cups apple cider vinegar

2 cups sugar (preferably organic)

1 teaspoon turmeric 

1 cinnamon stick

1/2 teaspoon red pepper flakes

Cover & refrigerate when cool
