There’s Nothing Good to Eat!

How many times have you heard, or said, “There’s nothing good to eat!”

I know I’ve said that plenty of times over my lifetime, including… today at lunch! I was feeling hungry for lunch, even called a friend to see if she wanted to have lunch out somewhere, but could not get in touch with her. So, I dragged myself over to my kitchen knowing I would not find anything there I wanted and that I simply needed to go shopping… I was due!

Even knowing there was nothing in the cabinet or fridge to eat, I opened up the cupboard, and there it was, a box of Isreali Couscous that I had previously bought and forgotten about. That’s when I headed for the fridge, looked around, and poof, I realized I had the makings of a delicious lunch just waiting for me. Here is what I made:

Isreali Couscous with chopped kale, feta cheese, kalamata olives, and garbanzo beans! It was SO YUMMY!  I just love it when I can just find things in the fridge a cupboard, get creative and create a fantastic meal… AND, more good news… I get to eat it likely two more times….

So… HA, There IS something good to eat after all and it was healthy and low budget as well!
