Turkey and Black Beans ala Dianne


This is a recipe that I threw together this summer because it was quick and easy and honestly, it’s what I had in the fridge… Turns out, it’s quite delish! Even my daughter Nicole and her boyfriend James gave it rave reviews. This can literally be done in about 20 minutes and can be served on a bed of lettuce or with a small salad.

By the way, I don’t usually use seasoning “packets”, but when I read the ingredients on the back of this particular Trader Joe’s pack, the only things it had in it were… sea salt, red chili powder, cayenne powder, paprika and black pepper… that’s it, and it’s super tasty and one pack will make two of these dishes. (Of course you can add each of these spices separately, I’ve done that when I did not have packet on hand.

Okay, here goes… super easy and simple.


  • 1- 1/3 pound organic ground turkey (or at the very least hormone free)
  • about 2 tblsp olive oil
  • 1 small to medium yellow onion, diced/minced
  • TJ taco mix seasoning packet or equivalent spices noted above.
  • 1 can drained and rinsed black beans
  • juice of about 1 lime
  • avocado (optional, but I wouldn’t leave it out)
  • 2% plain greek yogurt (optional… I like a little dollop myself, but if you’re not doing dairy leave out, still yummy)
Simply saute the onion in the olive oil until translucent, (I always add a little sea salt and black pepper during this process). Then add in the ground turkey and brown that. While browning the turkey, add in the seasoning packet. When the turkey seems cooked through, add in those black beans. Cook until heated through, squeeze lime, and that is it!
Serve with diced avocado and a dollop of the yogurt and dinner is served. Makes about 4-5 servings, so not only is this healthy and fast, it’s very economical. Lasts for several meals for little ol’ me 😉
