Summer Fruit Salad with a Twist!

Remember in my latest post when I said I’d be sharing some great recipes for staying cool for the summer? Well, here’s the first! I have made a delicious summer fruit salad with a special twist that is light, easy to make, and perfect for those hot summer days.

Fruit salad can be a little… well, boring. In efforts to make it more interesting, a lot of people like to add whipped cream or another whipped topping. But as well all know, those dairy- and sugar-heavy add-ons are not the best choices. So, instead, I’ve come up with a simple solution: cashew cream! It adds a wonderful taste to the fresh fruit, plus, it’s dairy-free, gluten-free, and packed with protein. Cashews are also lower in fat than other nuts such as almonds, peanuts, or pecans, so if you’re watching your weight for swimsuit season, this is a perfect alternative.

Cashew Cream Fruit Salad Topping

2 cups raw, unsalted cashews

Spring or filtered water

Agave nectar

Vanilla extract

Soak 2 cups raw, unsalted cashews in water overnight. Drain and rinse cashews. Put cashews into blender, adding spring or filtered water. Cashews should be completely submerged, with about 1/4-1/2 inch of water standing above. Add agave nectar and vanilla extract to taste (under a teaspoon each). Blend until completely mixed. If mixture is too thick, add water as needed.

Summer Fruit Salad

1 peach, diced

1 pint strawberries, quartered (or halved, depending on size)

1 pint raspberries

1 mango, diced

1 banana, sliced

Juice of a quarter of a lemon

Rinse and prepare all of your fruits and mix them together in a large serving bowl. Add the juice of a quarter of a lemon.

Serve fruit salad in individual servings. Top with cashew cream as desired. Eat up!

You’ll notice that you have a lot of cashew cream leftover. You can store this in the fridge and use it in smoothies, have it with granola and fruit, or blend it with more water to use it as a milk substitute. I’m sure there are tons of other great uses for it. If you come up with a favorite, let me know!
