How We Made Our Own Almond Butter… Almost!

Yesterday was my daughter Nicole’s first day as my summer assistant. I am so excited to have her with me and to have an assistant. We’ve already made huge progress. On day one we completely organized my office and the mound of paper. Yay Nik!

During the afternoon, Nicole got a little hungry and said she wanted some almond butter. Watch this video to see the homemade almond butter we nearly made!

Easy Recipe for Almond Butter:

2 Cups of Raw Almonds

Toast almonds in the oven at 350 degrees for 8-10 minutes

Let cool

Blend in food processor or blender until creamy. This process can take up to 10 minutes as the oils from the ground up almonds begin to release.

If not enough oil, feel free to add some olive oil until desired consistency is reached.

(I think one of the tricks is to actually use the entire 2 cups of almonds. Using less creates all the ground almonds to stick to the sides, thus the little issue with the spatula)

Enjoy and let me know what you think!
