I Suddenly Got Hungry Last Night….

Ha! Funny how that happens.

There I was working away, yes it was a Saturday night, what can I tell you… Anyway, I was working away, losing track of time when suddenly, I got really hungry and ran to the fridge, not knowing at all what I was going to eat.

Fortunately, I had recently done a pretty good shopping, so I knew I could get “something” in my belly rather quickly, or things were going to get ugly around here! 😉

As it turns out, I put together such a YUMMY Chicken salad, I had to share it with you… Here’s the pic and below is the recipe. It really made my belly quite happy!

Not quite sure about amounts, but I will do my best.

Dianne’s Saturday Night  Tasty & Fast Chicken Salad

  • About 1/2 pound organic/free range chicken breast strips
  • Extra Virgin Olive Oil
  • About 1/4-1/2 cup white wine
  • Organic mixed spring greens
  • About 1/4 cup thinly sliced organic carrots
  • 1/2 organic avocado
  • About 1/4 cup organic feta cheese
  • Handful of organic dried cranberries
  • Handful of Trader Joe’s Sweet & Spicy pecans (Have you ever tried them??? OMG So delicious & slightly addicting)
  • Lemon Juice

Directions:

  1. Saute chicken in olive oil, sea salt & freshly ground black pepper
  2. When just about done pour wine at the bottom of the pan to deglaze the pan and toss chicken in it in this final stage.
  3. Assemble all of the salady ingredients in any way your heart desires with chicken
  4. Toss with olive oil, lemon juice, sea salt, & black pepper!
