White Bean and Kale Soup Recipe

As promised to all my Facebook friends and fans of my fan page, here is my recipe for White Bean and Kale Soup… It was truly delicious! Try it and let me know how you liked it!

  • Olive oil
  • 1 onion diced
  • 2-gloves garlic minced
  • 2-cans Great Northern or Cannelini White Beans
  • 1 large bunch of kale
  • 4-cups Organic Free-range Chicken Broth
  • 2 links Chicken Andouille Sausage
  • juice of 1/2 a lemon
  • sea salt, coarse ground black pepper, oregano to taste

1. saute onion in olive oil at the bottom of the pot.

2. When onion is translucent, add garlic.

3. If you’re using some chicken sausage, chop and add to saute now.

4. Add 1 can of beans to saute and season with salt, pepper & oregano

5. Puree second can of beans with juice of 1/2 lemon (this will help make  the soup thicker and     creamier)

6. Add pureed beans and 4 cups of chicken broth to pot, bring to a boil, then  simmer for about 15 minutes or so.

7. While soup is simmering, chop kale by removing center vein and coarsely chopping. You can either stack the leaves and cut down either side, or simply pull the leaves from either side of the vein.

After 20 minutes of simmering, add kale to soup, simmer another 20 minutes until kale is tender. Serve soup with crusty bread and salad. Enjoy!
